Recently I was introduced to the ‘art’ of making Kombucha. It is a beverage produced by fermenting sweet tea. It can be purchased at natural food stores or brewed at home. Drinking Kombucha apparently has numerous benefits such as improved digestion, fighting candida (harmful yeast) overgrowth, mental clarity and mood stability. However, like with everything else out there, opinions tend to vary.
The key to making Kombucha tea is SCOBY. It is often referred to as ‘mushroom’ but it is in fact a culture of yeast and bacteria. There is a lot of information online about what Kombucha is and how to make it. Here is one recipe which takes it a step further to make it into soda!
